Description:

Come experience and get a look behind the scenes at Chef William Werner’s (a 2015 and 2016 finalist for the James Beard "Outstanding Baker" award) pastry creations from his popular San Francisco based pâtisserie, Craftsman and Wolves.

During this 2.5-day hands-on class in an intimate and relaxed atmosphere, Chef Werner will teach a wide variety of pasty techniques to perfect and refresh your shop offerings while sharing his reinvention of seasonal modern pastry.

This class will help you develop your creativity, perfect your techniques, modernize your offering but also share your experience with other chefs and connect with peers! Chefs come to learn at L’École Valrhona Brooklyn, they leave inspired, elevated and connected.



Objectives:

·       Produce pastry elements from Craftsman and Wolves pâtisserie culminating in an eye catching seasonally driven spread

·       Hone your skills with focused flavors and textures ranging from entremets to confections

·       Be part of an open discussion with Chef Werner about his experience creating and running a successful pâtisserie brand
