This one of a kind class with two l’École Valrhona Pastry Chefs is a celebration of the 30 year anniversary of l’École Valrhona. This exclusive class gives a small group of chefs the chance to learn the finest of pastry and chocolate and discover the best of what’s to come in our industry.


This class is the only four-day class of our program taught by two l’École Valrhona Pastry Chefs!

During this special hands-on class, Chef Givre and Poirier, who combined have 60 years of experience of testing and recipe development, will go over their deep chocolate knowledge and techniques, also sharing new breakthroughs.

They will also share Valrhona’s latest pastry innovation techniques on modern themes such as dairy-free plated desserts.

Become an expert and visionary in chocolate and pastry with this celebration of l’École Valrhona’s 30year anniversary class.



Objectives:

·       Take your bonbon and chocolate knowledge up a notch learning from Valrhona’s expertise, drawing from the reformulated “Essentials” book

·       Through Valrhona’s experience, learn how to create bonbons with perfectly balanced and inventive flavors

·       Explore Valrhona’s innovations in making balanced plated desserts to suit customers with dietary restrictions
