Are you a looking to upgrade your bonbon line? Join l’École Valrhona Chocolate Master Derek Poirier (2014 Top 10 Pastry Chefs in America) for an intimate three-day class on how to create unique ganache recipes and stunningly decorated molded bonbons.

Chef Derek works with you one on one and explains every technique, including different ways to decorate, techniques for capping, and shares with you his best tips. He will answer all of your questions so you can leave feeling knowledgeable, and confident to put your own twist on the recipes you learned.



Objectives:

·       Master techniques behind creating unique and innovative molded chocolate confections

·       Learn proper shelling and molding methods for molded bonbons

·       Produce balanced ganaches and fillings using fresh ingredients

·       Utilize airbrushing, hand painting, etching, and other unique techniques for decorating and texturizing -colorful eye-catching molded confections
