Spend 3 days with a small group of professional chefs and chocolatiers making inspiring framed chocolate bonbon recipes, learning all the technology and techniques behind inventive fillings and decorations, and have all your questions answered by the pros.

Join us for a special experience at l’École Valrhona Brooklyn where we take chocolate seriously!



Objectives:

·       Create advanced confections featuring a variety of fillings from ganache to praliné and pâte de fruit, using a guitar cutter

·       Learn to enrobe manually and using a machine

·       Explore the scientific aspects and foundations of chocolate making through a theoretical program

·       Learn methods to improve the quality of production and conservation of your bonbons

·       Use traditional techniques but also the latest technology available to create your bonbon range
